This salad recipe is by far the fastest, easiest, most nutritious and tasty lunch idea you can make. It consists of a few simple ingredients and can be ready in no time! I think it’s the perfect lunch for when you’re busy with work and don’t have much time on your hands to make a proper meal. I had this super healthy and light salad recipe with a side of roasted sweet potatoes and it made for a perfect quick lunch break.
Salad Recipe Ingredients
6 ripe tomatoes
1 red onion, thinly sliced
6 hard-boiled eggs, peeled and sliced
90 g (1/2 cup) marinated black olives
a few torn basil leaves, to serve
extra virgin olive oil, to drizzle
1 chopped red chili (for added flavor if you like it spicy)
Cut the tomatoes into thick slices and arrange on a large plate. Top with the onion, eggs and olives and scatter the basil leaves over the top.
Drizzle with some extra virgin olive oil and sprinkle generously with sea salt and freshly cracked black pepper.
