I can’t tell you how easy, nutritious and tasty this recipe is. It can be ready in no time and the best part is the dressing! If you like your food spicy like me, then you will love the richness of this carrot salad dressing which the Harissa plays a major role in. If you want to create a light, easy dish and don’t have too much time then this would be perfect for you.
Carrot Salad Tunisian Recipe: Delicious & Nutritious
500 g carrots
3 tablespoons finely chopped flat-leaf parsley
1 teaspoon ground cumin
1/3 cup olive oil
3 tablespoons apple cider vinegar
2 garlic cloves, crushed
¼ – ½ teaspoon ready-made harissa
12 black olives
2 hard-boiled eggs, quartered
Thinly slice the carrots. Bring 500 ml (2 cups) water to the boil in a saucepan. Add the carrot and cook until tender. Drain and then transfer to a bowl. Add parsley, cumin, garlic, vinegar and olive oil. Season with the harissa and salt and pepper. Stir well.
Put the carrots in a serving dish and garnish with the olives and egg.
Notes: If the carrots are not sweet, add a little honey to the dressing. I didn’t because I don’t like to add sweet elements to savory dishes 🙂
