This recipe is one of the simplest and tastiest side dishes that you could make. Sweet potatoes are so versatile and are far healthier than normal potatoes. To be honest, this was my first time to make them at home! I just recently made the switch and I’m so glad that I did.
Just as you would make roasted potatoes, follow the same simple steps to make these delicious sweet ones. Be careful though, as they can be very addictive!
Sweet Potatoes Ingredients
2 tbsps olive oil
3 medium sweet potatoes, peeled
Dried oregano (as per your preference)
2 garlic cloves (crushed)
½ medium brown onion, diced
Freshly grounded black pepper
Cut the potatoes into round 1-inch-pieces to make it easier to cook them.Add the olive oil, dried herbs, garlic, onion, salt and pepper to the potatoes and toss in a bowl until all the pieces are coated well.Place the potatoes evenly on a large baking tray and roast under 220 degrees for 45 minutes or until well cooked.Enjoy as a side dish to any main course or even with eggs for a hearty and complete breakfast!
