I just finished making and eating this recipe for lunch and I can’t tell you how happy I was with the result! It’s such an easy recipe to make, with very few ingredients, yet the outcome is amazing! I was truly impressed with how tasty my first attempt at making this simple Mexican turkey recipe was.
It’s also a perfect recipe for kids as you can make a batch and serve it at kids’ parties or for a quick dinner. The ingredients are nutritious too, so this dish oozes goodness and authentic Mexican flavors.
Turkey Recipe Ingredients
2 tablespoons olive oil
Mini tortilla wraps (or big ones cut in half)
Ground turkey (you can get a turkey breast fillet minced like I did)
Baby spinach
Half of a yellow onion (or less depending on preference)
One green chili
A handful of cilantro
Taco sauce
Three to four tablespoons of Mascerpone cheese
Oregano, salt and pepper for seasoning
Instructions
Fry the chopped onion in a pan over medium-high heat until soft. Then add the chopped green chili and chopped baby spinach (use as much of the spinach as you would like).Add the ground turkey to the pan and season with salt, pepper and dried oregano. I suggest that you add a lot of oregano for an enhanced taste.As soon as the turkey has been cooked, add the Mascerpone cheese to the mixture and you will see that it will easily blend with the turkey and other ingredients.Continue cooking the mixture over low heat and chop some fresh cilantro. In a baking tray, place the mini tortillas or big tortilla halves and fill with the turkey and cheese mixture.Bake the filled tortilla for a few minutes until it gets crunchy and then take out of the oven.Spread some taco sauce on top of each tortilla wrap and sprinkle with some freshly chopped cilantro.You can make a spicy tomato and cilantro salsa to have on the side with the Taquitos. Enjoy!
